I made this frosting for the first time a few weekends back. It's chocolaty with a bit of coffee flavor and is the easiest frosting I've ever made.
Awwesssomme!!

- 5oz semi sweet chocolate. Chopped. (I used chips)
- 5Tbsp brewed coffee.
- 1/3cup Unsalted Butter. Cut into small chunks.

Microwave chocolate and coffee for 30 seconds. Stir. Microwave another 15 seconds. Stir until smooth. Add 4 or so bits of butter at a time and stir until smooth. Let stand until a spreadable consistency.

* I used an electric hand mixer to blend the butter in. I was worried at first because the frosting did seem thin, but it did thicken to a perfect thickness. DD and I used a pastry bag with a large tip to pipe the frosting on cupcakes.
