I used this to frost some cupcakes a few weekends back. Chocolatey with a hint of coffee flavor.

- 5oz Semi-sweet chocolate. Chopped. (I used chips)
- 5Tbsp Brewed coffee.
- 1/3cup Unsalted Butter. Cut into small chunks.
Microwave chocolate and coffee 30 seconds. Stir. Micro 15 seconds. Stir. Add 4 or so bits of butter at a time and stir until smooth. Let stand until desired consistency.
* At first I mixed by hand then I used an electric hand mixer to blend. The frosting did seem a bit thin at first, but it firmed to a perfect thickness. We piped the frosting on to the cupcakes with a pastry bag and large tip.
